A celebratory expression, El Jolgorio Pechuga is produced from wild-harvested Espadin agave in honor ofthe day of the Senor de Esquipulas. It is twice distilled in a copper pot still with pineapples, limes, oranges, plantains, apples and pears, as well as the breast of a guajolote—a creole turkey rooster of the region.
