Kilchoman, though a young distillery, understands the tradition of its island and cleaves to ancient methods to produce this small-batch Scotch. Growing and malting their own barley is just part of the care taken to make this vatting of 3-, 4-, and 5-year-old maltings. Pale straw in color, peaty and smoky with vanilla notes and a long, long finish, this is a true slow sipper.
