The massive wild agaves used in this mezcal grow for an average of 20 years before reaching maturity. After harvesting, they're cooked in-ground for 168 hours, rested post cook for 288 hours, crushed with mallets and axes, and fermented for 192 hours in pinewood vats before being double distilled in copper caso and pinewood stills and bottled at proof. Bright Notes of Nori, Roasted Green Pepper and Cantalope.
